Buffets are likely to be in lower demand in January with the focus being turned towards CNY. While there are a few hotels that are focusing on CNY-themed buffets, most consumers are probably going for set menus in Chinese restaurants than eat-all-you-can options. As such, many hotel buffet restaurants in Singapore are not going all-out with themed buffets this month and relying instead on their standard buffet offerings. This is not a bad idea by any measure as many hotel buffets are well known for their mainstays / bread-and-butter dishes.

Estate is the hotel’s all-day dining and buffet restaurant. The 340-seater space is cavernous and surprisingly feels rather intimate with its partially-enclosed spaces. The buffet here promises to NOT be run-of-the-mill, with highlights such as Gochujang Tacos, Black Truffle Duck, Honey Soy-Glazed Short Ribs and a wide variety of skewers. They are also popular for the wide variety of seafood in the cold seafood section as well as freshly-shucked oysters. For Friday and Saturday dinners only, Estate is having a Seafood & Wine buffet featuring the likes of Maine Lobster, Snow Crab, Freshly Shucked Seasonal Oyster, Crab with White Sarawak Pepper and more. They also have a Grand Sunday Champagne Brunch with additional food highlights and even activities for the kids such as a magician, board games, canvas painting and more.

For dinner, they offer a BBQ Buffet featuring an alfresco barbecue station. Seafood selection in the buffet include Ocean Scallop, Slipper Lobster, Poached Tiger Prawn and Alaskan Snow Crab. The buffet at Town Restaurant is now available daily for executive buffet lunch on weekdays, international buffet lunch on Saturdays and a champagne brunch on Sundays. Depending on which day you come, you can expect a number of local delights such as Gochujang Chili-glazed Salmon Fillet, Snow Crab Leg and Alaskan King Crab on ice being served alongside a variety of Asian and Western favorites. They also have a laksa station as well as fresh sashimi on ice.

Ginger is one of the halal hotel buffet restaurants in Singapore. Peppermint also has a very decent buffet – their main differentiating factor being the sustained use of herbs and even vegetables grown from the hotel’s own garden. While rooftop gardens have become quite popular among hotels in Singapore, this property’s vegetable garden is among the biggest I have seen in the country’s hospitality sector and it supplies 20% of Peppermint’s herbs and vegetable needs. Their dishes change often depending on the season. Highlights in the past have included Crustacean Otak Otak, Black Truffle Bak Chor Mee with Rock Lobster and Urban Farm Chili Sambal Jumbo Squid Tentacles.

Of the hotel buffets I have visited under the new normal, Shangri-la Singapore’s has one of the longest buffet spreads. The Line’s buffet has the theme “flavors of the world” and indeed, the menu is a run through of international cuisine. Featuring over 35 dishes, diners can expect mainstays from Japanese, Western, Indian and even local cuisine.

Ritz Carlton Millenia Singapore

Colony at Ritz Carlton Millenia Singapore is one of the Lion City’s most popular buffets. Personally, I have found their offerings to be of consistently high quality – with many deliciously concocted dishes despite the mass-produced nature.
Colony offers a standard buffet for Monday to Saturday lunch and Sunday to Thursday dinner. I dropped by on a Friday to check out their Seafood Dinner (S$112 per adult / S$56 per child on Fridays and Saturdays) and was quite impressed with the level of service and also the way dishes were presented.

Highlights during the seafood dinner include the A la Plancha Boston Lobster, Beef Rib (my personal favorite), Wok-fried Pork Leg Bee Hoon and the Colony Peanut Wrap.
Aside from the Seafood Dinner on Fridays and Sundays, Colony also has its Sunday Champagne Brunch (S$198++ per adult) served in a similar format.
